East Meets Southwest Wrap
Chicken breast marinated in sesame-ginger marinade, served on whole wheat tortilla with lettuce, tomato, and sweet-spicy southwest mustard.
I took the easy way out on the chicken and bought precooked frozen patties. I wanted to make this as a quick post-workout snack, so speed in preparation was a must. Also, as I'm watching fat and calories right now, pre-portioned breasts was easier. I suspect that I may try this again with raw chicken in a few months.
All in all, this was a success. The sweetness in the mustard pulled in the sweetness of the tomato and marinated chicken. The eight inch whole wheat wrap was a bit small, so I suspect that the next attempt will be made with smaller tomatoes.
